Cajun Chicken Sandwiches

Cajun Chicken Sandwiches

2 pounds chicken tenders
2 cups buttermilk
3 Tablespoons Slap Ya Mama Cajun Pepper Sauce
2 Tablespoons Slap Ya Mama Cajun Original Blend Cajun Seasoning
Oil for frying
1 1/2 cups flour
1/2 Tablespoon kosher salt
1/2 cup Slap Ya Mama Cajun Gumbo Dinner Mix
3 eggs
1 cup plain bread crumbs
3 sliced tomatoes
Lettuce
Mayo
6 split bulkie rolls

In a large bowl, combine buttermilk, pepper sauce, Cajun seasoning. Trim chicken of any fat and place in the buttermilk mixture. Cover and chill for 1 hour to overnight.

In a large fry pan, heat 1 inch oil. In a large shallow bowl combine flour, kosher salt and gumbo mix. In another shallow bowl beat 3 eggs. In another place the breadcrumbs.

Drain the chicken and dredge in the flour mixture. Place in the egg and turn to coat, letting any extra drip off. Place in the bread crumbs and shake around to coat.

Place the chicken in the hot oil and cook until golden brown. about 4 minutes per side. Drain on paper towels.

Broil rolls until lightly toasted and pile on some tomatoes, lettuce and a few pieces of chicken, top off with some mayo.

  1. I so gotta try this Recipe. First job, source the ingredients. as I live in Canada, I think the INTERNET will be great help in this search

    1. You can find all of the Slap Ya Mama products on their website but I would bet they sell them in your stores too! Good luck!
